How to make a Lemongrass Fizz

Lemongrass tea zings with a sweet, lemony freshness that lingers long after drinking. A herbal infusion, its clean finish makes it perfect as a refreshing caffeine-free afternoon pick-me-up, and is delicious hot or iced.

Here's how to make a Lemongrass Fizz - we'll leave the choice of garnish up to you: muddled with mint, you'll end up with a citrus-forward mojito-style spritz, or with cucumber, it's a refreshing cooler with a more delicate and balanced sweetness.

What you need (per drink)

  • 60ml Lemongrass tea concentrate (see brewing instructions below)
  • 10ml lime juice
  • 15ml sugar syrup 
  • Plenty of ice (crushed for mint garnish, cubed for cucumber garnish)
  • Garnish: a handful of mint OR two slices of cucumber.

Brewing Instructions

This makes enough Lemongrass tea concentrate for 2 drinks.

  1. Add 3g loose leaf Lemongrass tea (or 2 Lemongrass tea bags) to freshly drawn, boiling (100°C) water for 4 minutes.
  2. Strain your Lemongrass tea leaves (or remove your Lemongrass tea bag).
  3. Leave until completely cooled.
  4. Refrigerate for up to 3 days.

Method (with mint, Mojito style)

  1. Fill a glass with plenty of crushed ice.
  2. Muddle most of the mint leaves with the Lemongrass tea concentrate, lime juice and sugar syrup (leave one sprig for garnish).
  3. Pour over your ice.
  4. Top with soda and stir gently to combine.
  5. Garnish with a mint sprig.

Method (with cucumber garnish)

  1. Fill a glass with plenty of cubed ice.
  2. Garnish glass with two slices of cucumber.
  3. Dry shake Lemongrass tea concentrate, lime juice and simple syrup together in a cocktail shaker until a foam forms.
  4. Pour over ice.
  5. Top with soda and stir gently to combine.
