How to Make (Non-Alcoholic) Rooibos Punch

This was one of the first recipes we landed on when our Iced Tea testing began this summer and we’ve been back to it time and time again. The recipe brings out the unique vanilla sweetness of the Rooibos, with the strawberries then further emphasising its rich, red-fruit notes. The result is surely Iced Tea’s answer to a non-alcoholic Pimms, so feel free to add more fruit, such as chopped apple or raspberries, too if you fancy it…

What you need (per drink)

  • 1 heaped tsp Rooibos tea leaves or 1 tea bag (see brewing guide below)

  • 20ml simple sugar syrup (see here for a quick & simple how-to)

  • 20ml lemon juice 

  • 1 strawberry, hulled and cut into 4

  • Basil leaf 

  • Ice

Brewing Guide

We recommend hot-brewing your tea for this one.

  • Bring 150ml freshly drawn, filtered water to the boil.

  • Pour over 1 heaped tsp Rooibos tea leaves or 1 tea bag

  • Allow to infuse for 5 minutes

  • Remove the leaves or tea bag


Method

- Prepare your simple syrup, ideally ahead of making your drinks

- Make your Rooibos tea and set aside to cool

- Add the tea, syrup and lemon juice to a shaker with plenty of ice

- Shake for 10 seconds

- Strain into a glass with fresh ice and your chopped strawberries

- Garnish with a basil leaf
