How to make Hibis-kiss! - The Proper Shake Up 2025 winner

In October, we hosted our annual tea cocktail competition, 'The Proper Shake Up'.
As always, it was a real treat to witness the creativity, craft and innovation brought by all of the competitors. The Proper Shake Up is a highlight in the Good & Proper events calendar which serves as a great reminder of just how versatile tea can be. Not only brewed, but shaken, stirred, vaporised, and clarified. All part of our mission to show the world how good tea can be, when it’s done properly.

With an incredibly high standard of entries, competition was as tough as ever and we're delighted to share the winning recipe from Hannah Williams - Hibis-kiss!

To make your grapefruit juice

  • 3 grapefruits
  • 1 teaspoon of brown sugar
  • 1 lemon
  • Slice the grapefruits in half and place on a lightly oiled roasting tray to prevent sticking.
  • Sprinkle about a teaspoon of brown sugar on top of each of the grapefruit halves and place into a pre-heated oven.
  • Roast the grapefruits for about 10-15 minutes, or until you see the brown sugar melt and caramelise on top of the grapefruits.
  • Take out of the oven and let cool.
  • Zest and juice your lemon into a bowl.
  • Once cool, squeeze the grapefruit juice and add to the lemon & zest bowl.
  • Strain the mixture and place to the side.

To make your rosemary syrup

  • 1 cup of water
  • 1 cup of caster sugar
  • 1/4 cup of dried rosemary
  • Add 1 cup of water and 1 cup of sugar into a pot, and start to boil on your stove to make a simple syrup.
  • Add 1/4 cup of dried rosemary, and bring the syrup to a simmer for 1 minute, and then let steep for 15-20 minutes.
  • Strain the syrup through a mesh and place to the side.

To make your Hibiscus tea base

  • Brew 4 tablespoons of the Good & Proper Hibiscus tea in 250ml of water and add your cinnamon sticks. Let the tea steep for 3-4 minutes before removing the ingredients.

To make your finished drink (serves 1)

  • 50ml of Hibiscus tea
  • 50ml of tequila
  • 50ml of grapefruit juice
  • 30ml of rosemary syrup
  • Rosemary for garnish
  • Ice

  • Add 50ml of grapefruit juice, 50ml Hibiscus, 50ml tequila and 30ml of rosemary syrup and shake over ice.
  • Mix caster sugar and cinnamon onto a plate in a 1:1 ratio to make a sugar rim for your glass.
  • Prep your glass with ice and pour your Hibis-kiss over.
  • Take a swig and enjoy!
