How to Make an Earl Grey Sour

There’s something special about tea in a cocktail. Each tea offers something different - a lift of citrus here, a whisper of smoke there - and few do it better than Earl Grey. With bright, fragrant notes of bergamot, it pairs beautifully with the sharpness of lemon, and the smooth sweetness from the sugar syrup to create a perfectly balanced drink: the Earl Grey Sour.

This is a cocktail that feels both classic and surprising - familiar, yet distinctly Good & Proper. A nod to tradition, done properly.

What you need (for 2 coupe glasses)

  • 2.5g (1 heaped tsp) Earl Grey tea leaves
  • 100ml gin
  • 50ml freshly squeezed lemon juice
  • 2 medium egg whites
  • 50ml sugar syrup

Method

  • Add your Earl Grey to the gin and leave to infuse for 4 hours, then strain. (It’s worth making a larger batch if you think this might become a regular in your repertoire - and trust us, it will.)
  • Chill 2 coupe glasses in the freezer while you make the cocktail.
  • Add the infused gin, lemon juice, egg whites and sugar syrup to a cocktail shaker. Shake vigorously!
  • Strain through a fine sieve into the chilled glasses and enjoy immediately.
