How to Make An Iced Rhubarb Green Tea
Introducing an Iced Tea recipe from our long-term wholesale partner and friends, Established Coffee in Belfast. One of the greats, as anyone who has visited them will attest, Established is a very special place, thanks to a wonderful team, exceptional food, fine coffee and of course great tea. They’ve always done us proud, and their iced tea creations every year are no exception. This is on the menu at the moment - and now you can try it at home.
Iced Rhubarb Green Tea
Serves 10 - 12 cups
To make the cold brewed tea:
-37g Jade Tips Green Tea
-1850ml cold water
-Leave to steep for 4 hours and store in the fridge
After 4 hours remove the tea filter from the jug.
To make Rhubarb Syrup and Garnish:
-400g rhubarb (for syrup)
-100g rhubarb (for garnish)
-500g sugar
-500g water
-2 lemons
Thinly slice the rhubarb (garnish) on a mandolin and store in a tub in the fridge
Slice 400g rhubarb into small 2cm chunks and slice the lemon into small wedges
Combine all ingredients in a pan
Reduce for 30 mins
Strain out the syrup
Store in a squeezy bottle
To serve:
Add ice to a glass
Add 3 slices of the fresh rhubarb from the tub into the glass
Add 175ml of cold brewed green tea
Finish with 35ml of rhubarb syrup
Serve and enjoy!
