How to Make a Rooibos & Honey Cocktail with Good As Gold

Good As Gold's bartender-in-residence, Joshua Freeman, is always shaking up something delicious, and recently has been including our tea in his creations. He's kindly agreed to share one of his tea cocktail recipes for you to enjoy at home.
Introducing the Good As Gold Iced Tea - a Rooibos & Honey Cocktail
What you need (per drink)

40ml of cold Good & Proper Rooibos tea

35ml vodka
-
20ml white port
-
20ml lemon juice
-
20ml milk
-
15ml honey syrup
-
Plenty of ice
Brewing guide
We recommend hot-brewing your Rooibos in advance and then leaving it to cool before serving.
Method

Prepare your tea as per the brewing guide above and wait for it to cool

Pour the cold Rooibos, vodka, white port, lemon juice and honey syrup into a mixing glass and stir well

Pour the milk into a separate glass, and slowly add the Rooibos mixture. The liquids should begin to separate as the lactose and acid react

Take your mixture and strain it through either a coffee filter or cheesecloth (the first few drops through the filter won't come out clear so make sure to keep watch, switch filter glasses, and pour those first few drops back into the filter)

Wait for the mixture to fully filter

Prepare a highball glass with a sprig of mint, slice of lemon and plenty of ice
