How to make a Hibiscus Rhubarb Passion

Hibiscus makes a brilliant base for iced drinks - bright, tart and full of vibrant fruit character.

In this Hibiscus Rhubarb Passion, passionfruit brings a gentle tropical sweetness that softens the sharpness of the hibiscus, resulting in something lively, balanced and deeply refreshing.

A bright and refreshing summer serve that’s perfect poured over plenty of ice on a hot afternoon.

What you need (per drink)

  • 75ml strong Hibiscus tea (see brewing instructions)
  • 10–15ml rhubarb cordial (or homemade rhubarb syrup)
  • 1/2 passion fruit
  • 75ml cold water
  • Plenty of ice
  • Garnish: lemon zest

Brewing Instructions

  1. Add 1 heaped tsp loose leaf Hibiscus (or 1 tea bag) to 100ml boiling water
  2. Leave to brew for 10 mins minimum
  3. Strain and set aside to cool

Method

  1. Fill a glass with ice.
  2. Add all ingredients (minus passion fruit) and stir gently to combine
  3. Add the passion fruit (seeds and pulp only)
  4. Garnish with a long lemon zest
