How to make a Hibiscus Rhubarb Passion

In this Hibiscus Rhubarb Passion, passionfruit brings a gentle tropical sweetness that softens the sharpness of the hibiscus, resulting in something lively, balanced and deeply refreshing.
A bright and refreshing summer serve that’s perfect poured over plenty of ice on a hot afternoon.
What you need (per drink)
- 75ml strong Hibiscus tea (see brewing instructions)
- 10–15ml rhubarb cordial (or homemade rhubarb syrup)
- 1/2 passion fruit
- 75ml cold water
- Plenty of ice
- Garnish: lemon zest
Brewing Instructions
- Add 1 heaped tsp loose leaf Hibiscus (or 1 tea bag) to 100ml boiling water
- Leave to brew for 10 mins minimum
- Strain and set aside to cool
Method
- Fill a glass with ice.
- Add all ingredients (minus passion fruit) and stir gently to combine
- Add the passion fruit (seeds and pulp only)
- Garnish with a long lemon zest
