How to Make Sparkling Four Seasons & Lime Iced Tea

For those who prefer something a more delicate iced tea on a hot day, this one’s for you.

The fresh, floral notes of our Four Seasons, a lightly-oxidised, 'green' oolong, make for a wonderfully refreshing iced tea, lifted in this recipe by a gentle fizz and, thanks to a squeeze of lime, a little zing too. If you have never tried any of our oolongs, this is one of our most popular and a great place to start - try it iced in this recipe or brew it hot for a smooth and floral cup with notes of tropical fruit.

What you need

  • 1 tsp of Four Seasons tea leaves

  • 50ml Soda water

  • Juice of 1/2 lime (15ml)

  • 1 tsp of Honey

  • Plenty of ice

Brewing Guide

This recipe works well hot-brewed to give the drink more body, but like most oolongs, it is also delicious cold-brewed so brew to your preference.

  • Bring 150ml freshly drawn, filtered water to approx 90°c (or let it cool a little after boiling)

  • Measure 1 level tsp Four Seasons tea leaves into a pot or mug & add your hot water

  • Leave to infuse for 4 minutes

  • Remove the leaves

Method

  • Prepare your tea as per Brewing Guide above
  • Stir in the honey while still warm, then allow the tea to cool a little
  • Pour the sweetened tea into a shaker with the lime juice and ice & shake vigorously
  • Strain over a glass with fresh ice
  • Top up with soda water
  • Garnish with a wheel of lime
  • Enjoy!
