Next up in our Brewer’s Pick Guest series is the famous Long Jing, or Dragon Well as it is often referred to - one of 10 of the so-called ‘Famous Teas of China’.
This particular example is classified as pre-Qing Ming, meaning it is produced early in the year from the very first spring shoots of the season. The freshly plucked leaves and buds are shaped and fired by hand in hot woks, giving them their characteristically flat, sword-like appearance. The unique wok-firing process also adds a delicate nutty aroma to the otherwise citrussy, vegetal notes of this young green tea. Sweet and savoury all at once, this makes for a truly delicious cup of green tea.
