Next up in our Brewer’s Pick Guest series is the wonderful Dong Ding Oolong - widely considered to be one of Taiwan’s finest teas.
The name means Frozen Summit and refers to the mountain in Nantou County where this tea was originally grown. The best examples, including this one, are now found beyond that area, but often still reflect the more traditional style of roasting. These leaves have undergone multiple slow bakes at low temperatures, resulting in a flavour that combines the floral, creamy character of a classic high mountain oolong, with toasty notes of caramelised nuts and warming spice. A delicious and complex infusion that will almost certainly leave you wanting more.
